Finding fresh fish is easy. All you need is the right eye and sense of smell for it.

Any discolouration or unusualness should be considered a bad omen. Likewise, any foul or unusual smell should also not be considered when looking for fresh fish when making a grilled striped bass recipe!

When cooking striped bass, the ideal age is a small to young striped bass. To determine the age of striped bass, check their length. The ideal length of a fresh small to young striped bass can be anywhere between 20 to 36 inches.

Pro -tip: Striped bass below 18 inches of length is illegal to sell

Anything above the length of 36 inches may not have the ideal flesh for cooking. But more than that larger fishes may have accumulated higher levels of mercury as they predate larger fishes to thrive on.

2-step Oven Grilled Striped Bass Recipe With Veggies

Recipe Name: Oven Grilled Striped Bass Recipe With Veggies

Short Summary:

A 2-step grilled striped bass recipe made in the oven, on a bed of golden sliced potatoes!

Equipment:

This 2-step recipe requires no special equipment other than:

  • an oven
  • A large heavy-duty skillet or sheet pan
  • A mandolin (A sharp knife shall also work fine in case you don’t have a mandolin)

Ingredients:

  • 2 pounds of fresh striped bass, cleaned and fileted.
  • 2 pounds of golden potatoes, sliced ⅛ inch thick using a mandolin.
  • 1 cup of olives, pitted and sliced through the centre.
  • ¼ cup of olive oil
  • 8 dried or fresh bay leaves
  • 2 lemon, thinly sliced and wedged
  • Sea salt and Coarse ground black pepper for seasoning

Step by step Instructions:

  • begin heating the oven at 425 F.
  • Take a large sheet pan or skillet – large enough to hold 1 or two whole striped bass fish filets.
  • Brush the pan or skillet with olive oil. Don’t forget the sides.
  • Now place the sliced potatoes in the tray, overlapping each other as you lay.
  • Once layered, brush a generous amount of olive oil on them and sprinkle freshly ground black pepper and salt.
  • Put the potatoes to bake in the oven for at least 20 minutes.
  • Meanwhile, sprinkle the flesh side of the fish with seasoning.
  • After the 20 minute mark, take the skillet or pan out of the oven and place the seasoned fish on top of the partially done potatoes. Skin facing up.
  • Place the sliced olives and bay leaves and cover with parchment paper and bake for another 20 minutes or until the fish has cooked well.
  • Before serving, garnish with sliced lemon wedges.
  • Serve hot.

 Top servings:

 I prefer my grilled fish with sliced lemon wedges and fresh herbs.

However, lemon herb butter is also one of the many loved grilled striped bass toppings.

Pan grilled striped bass recipe with lemon and herb sauce

Recipe Name: Grilled Striped bass with lemon and herb sauce

A perfectly grilled filet of striped bass served with a silky lemon and herb sauce, makes this striped bass recipe a stunner

 Equipment:

Other than the usual equipment, this recipe requires:

  • a whisk
  • A large non-stick skillet

 Ingredients:

  • 500 gms of striped bass with skin, fileted into 5 portions and cleaned
  • 3 tbsp of olive oil
  • 2 tbsp of white wine vinegar
  • 2 tbsp of butter, unsalted and cold
  • 2 tbsp of parsley, freshly chopped
  • 1 lemon, thickly sliced into rounds
  • 1 tsp of kosher salt
  • ¼ tsp of black pepper

Step by step Instructions:

  • Begin by heating a large skillet on medium-high heat.
  • Meanwhile, pat drying the filets of fish with a paper towel.
  • Sprinkle and rub the filets with ¾ tsp of salt and ¼ tsp of pepper.
  • Once the skillet is heated, place thick lemon slices and cook until slightly charred.
  • This will take 3 to 4 minutes.
  • Next, add oil to the pan and place the fish fillets in the pan, with the skin side facing down.
  • Now let the fish grill for about 6 to 7 minutes, or until the skin starts to brown and the flesh turns opaque.
  • Once the fish has cooked well, it will come off the pan without sticking.
  • Once the fish comes off without sticking, flip it and cook for another minute or two.
  • Now transfer the filets and lemon to a serving dish and keep aside.

Lemon Herb Butter:

  • Now using the same pan, we grilled the filets in, we are going to make lemon herb butter.
  • Turn the heat to a medium-low, and add white vinegar to the pan drippings left behind by the grilled fish.
  • Add the ¼ tsp of salt and cold butter cubes to the pan and let cook.
  • As the butter starts to melt, using a whisk, whisk the mixture so it all emulsifies together. Forming a glossy sauce.
  • Pour the sauce evenly over the fillets, and sprinkle with freshly chopped parsley.
  • SERVE!

Top servings:

For this particular dish, there is no better topping than lemon herb butter.

But if you want something more, serve with a serving of garlic buttered mushrooms!

An Easy Grilled Striped Bass On A Bed Of  Sauteed Greens:

Recipe Name: Grilled striped bass on a bed of sauteed greens.

  • a large boiling pot for blanching veggies
  • A large saute pan for sauteing veggies

Ingredients:

  • 6 pieces of striped bass, filleted and cleaned, approx. 100 gms each
  • 1 bunch of asparagus, cut in separate stocks, blanched and cooled in a water bath
  • 2 cups of sugar snap peas, blanched and cooled in a water bath
  • 1 cup of fava beans, blanched, cooled in a water bath and deshelled
  • 1 cup of morel mushrooms, cut in half
  • ½ cup of chicken stock or vegetable stock
  • 3 cloves of fresh garlic
  • Olive oil to grill fish and saute veggies
  • Salt as per requirement

Step by step Instructions:

 Sauteed Greens:

  • Begin by heating a large saute pan over medium-high heat.
  • While it heats, smash and peel the whole garlic clove, and add with a generous amount of olive oil, in the heated pan.
  • Saute the garlic until it turns golden brown.
  • Now that the flavour and garlic aroma has infused in the oil, remove the remaining garlic clove from the pan.
  • Now add the mushrooms and saute for a few seconds.
  • Add the chicken stock to it and season with salt.
  • Next, as the stock simmers, start to add the asparagus and fava beans and saute for a couple of more minutes, until the stock evaporates and the veggies are evenly coated with garlic-infused oil.
  • Don’t forget to season the veggies before dishing them out.

Grilled striped bass:

  • Bring the fish to room temperature, by placing it out of the fridge at least 20 minutes before cooking.
  • Begin by pat drying the fish with a paper towel.
  • Heat a skillet over medium-high heat.
  • While the skillet heats, Season the fish with salt.
  • Add a generous amount of olive oil to the pan and place the fish filets, with the skin side facing down.
  • Now take another heavy skillet and oil the bottom of it, to prevent it from sticking.
  • Place the skillet for a couple of minutes on top of the fish filets.

Pro tip:- this is to add some weight over the filets while frying, which will result in a crispy grilled exterior.

  • Divide the total cooking time for fish into three. In general, it takes 7 to 10 minutes of cooking for a 1-inch medium-thick piece
  • In order to ensure a perfectly grilled filet of fish, cook for 7 minutes on one side, and for 3 minutes on the other side.
  • Place the fish on top of the sauteed veggies and serve hot!

This dish is good on its own, but if you are more of a sauce loving person, there is no harm in adding a serving of lemon herb butter to it!
